Singapore’s bakery scene continues to grow at an incredible pace, and the latest name to join the mix is MIMMO Bakery, an artisanal café concept from Hong Kong that has officially opened its first permanent Singapore outlet at Asia Square Tower 1. Founded by Le Cordon Bleu-trained pastry chef Domenico “Dom” Giammarella, MIMMO blends French and Italian pastry traditions with familiar Hong Kong flavours, promising handcrafted bakes made from natural ingredients at wallet-friendly prices.

Naturally, we had to see if the bakery lives up to the hype. From pastries and desserts to handmade pasta and café fare, we sampled a good cross-section of the menu. While there were a few hits that we’d happily return for, not everything was quite as memorable.
If there’s one item you absolutely shouldn’t leave without ordering, it’s the Egg Tart ($4). At first glance, it looks fairly understated compared to some of the more Instagrammable pastries on display. But one bite completely changed our minds. The pastry was remarkably crisp and flaky, shattering delicately with every bite, while the silky egg custard struck the perfect balance between rich and light. It’s easily one of the best egg tarts we’ve had in Singapore, and one that rivals many specialist bakeries.

The Apple Croissant (S$5) was somewhat of a mixed bag. Visually, it looks good. Beautifully glazed and meticulously presented, it’s the kind of pastry that immediately catches your eye in the display cabinet. Unfortunately, the flavour didn’t quite match the appearance. The apple filling came across as rather artificial, lacking the fresh fruitiness and buttery warmth we had hoped for.

MIMMO’s Pistachio Bolo Bao (S$5) is purportedly one of the bakery’s signature creations, blending the beloved Hong Kong classic with a pistachio twist. The problem? We didn’t even realise we’d eaten a bolo bao until afterwards.
Instead of the familiar soft bun topped with a crumbly, buttery crust, this version felt much closer to a tiny choux pastry. While the pistachio filling was pleasant enough, it lacked the comforting texture and nostalgic character that define a classic bolo bao. Personally, we’d much rather see MIMMO execute a traditional version before reinventing it.

The bakery’s Milk Tiramisu ($7) is another signature item, but it leaned far too sweet for our liking. Rather than showcasing the delicate balance of mascarpone, coffee and cocoa that makes tiramisu so irresistible, the sweetness dominated the dessert and masked much of its complexity.

The Tigres (S$2), meanwhile, were perfectly decent but failed to leave a lasting impression. Pleasant enough to share over coffee, but not something we’d specifically return for.
Beyond pastries, MIMMO also serves handmade pasta prepared to order alongside sandwiches and other café dishes.
We appreciated the effort that went into making the pasta fresh in-house. It was cooked very much in the Italian tradition, though admittedly a little too al dente for our personal preference. That said, the sauce was excellent—rich, well-balanced and packed with flavour in a mushroom and pancetta rose sauce.
The Italian Club Sandwich (S$18) was another solid option for lunch. It was enjoyable enough and made for a satisfying café meal, although it didn’t particularly stand out against the rest of the menu.
The Takeaway
MIMMO Bakery enters Singapore with an interesting proposition. It combines French and Italian pastry techniques with familiar Hong Kong-inspired flavours, while also offering a full café menu that includes handmade pasta, sandwiches and weekend brunch. While not every pastry hits the mark, the bakery delivers one genuinely outstanding pastry. The Egg Tart is exceptional—beautifully crisp, perfectly balanced and easily reason enough to make the trip to Asia Square.
