Skyline Soirées and Sixties Spirit: Las Palmas’ Cocktail 2.0 Rewrites Rooftop Glamour

Las Palmas is dialling up the nostalgia — this time louder, glossier, and infinitely groovier. Perched 33 floors above the city at Courtyard by Marriott Singapore Novena, the rooftop bar unveils Cocktail Volume 2.0, a vibrant sequel that trades Palm Springs’ serene desert chic for a kaleidoscopic celebration of 1960s Americana, all reframed through a contemporary Asian lens.

Think Hollywood daydreams, vinyl static, and mid-century cool, all distilled into the artistry of Head Bartender Ron Aransay. His latest menu is structured into four chapters – Modernist, Vinyl, Hollywood, and Getaway – each designed like a cinematic mixtape, layered with visual cues, storytelling, and flavours that echo the glamour of a bygone era.

With panoramic skyline views and pastel-toned cabanas, Las Palmas remains one of Singapore’s most photogenic escapes. Golden-hour sunsets, breezy playlists, and cocktails that feel both transportive and timeless — it’s a mid-century reverie perched above the urban rush.

We began the evening with That’s Amore ($20), a sparkling ode to Dean Martin’s Italian serenades. Americano Bianco and Amaro Montenegro meet orange sherbet and grapefruit bitters for a refreshing aperitivo that opens with zesty brightness and closes with soft, herbal warmth. It’s bubbly, refreshing, and the perfect prelude to the night.

Slick Rick ($20) follows with suave, old-school charm. Built on Benriach 10 Single Malt Whisky, it teases out aromatic notes of pear and dill, rounded by chrysanthemum air. The result is a delicate balance of smooth, floral, and lightly smoky.

For something brighter, Tokyo Cowboy ($21) channels the dreamy optimism of Haruomi Hosono and the city-pop movement. A fusion of Iichiko Saiten Shochu and Ford’s Gin with cucumber, citrus, and almond, it’s aromatic and cooling, with a clean, green finish. Visually, it’s one of the most stunning serves of the night; the rice paper print inspired by Hiroshi Nagai’s artwork makes it almost too pretty to sip — though the flavour leaned a touch medicinal for me.

The Bamba Paloma ($23), a mezcal-based ode to Ritchie Valens’ “La Bamba”, was far easier to love. Olive oil fat-washed mezcal gives a silky depth to grapefruit, maraschino, and rock melon, while a dusting of chilli flakes along the glass’s edge adds a bold kick. I skipped the spice, but my dining companion assured me it packed quite the punch. Smoky, juicy, and effortlessly drinkable — definitely one of the standouts.

I wrapped up my night with Cheesecake 2.0 ($23), which I chose as my last drink simply because it sounded too intriguing to pass up. A playful wink to 1960s pin-up culture, it blends Haku Vodka, Limoncello, Vanilla, and Mascarpone, then clarifies into a dessert-like cocktail that somehow tastes exactly like cheesecake. Light, clean and incredibly balanced, it was easily my favourite of the night.

But it’s not just what’s in your glass that matters. Between sips, guests can snack on simple yet satisfying bar bites that complement the retro flair—tacos, sandwiches, and even fried rice for that comforting hit of familiarity. And for those chasing a sweet finale, the Churro-rific ($15) delivers a delightful twist: churros dusted in five-spice powder, served with kaya and salted peanut butter dips. 

Far from a thematic gimmick, Las Palmas is a state of mind: sun-soaked, stylish, and steeped in retro allure. Whether you’re after a poolside aperitif or a nightcap under the stars, Cocktail Volume 2.0 invites you on a spirited escape to an era when vinyl ruled and Palm Springs reigned as the playground of the stars.
