IPPUDO Launches its First-ever Sushi Bar Concept at Marina Bay Sands, Singapore

IPPUDO, best known for its Hakata-style tonkotsu ramen, has launched a brand new food concept, Roll Sushi by IPPUDO at its Marina Bay Sands outlet. This is the brand’s first and only sushi bar worldwide, serving up two sushi styles: Maki, the traditional cylindrical sushi roll sliced into bite sized pieces and Tatami, a distinctive sushi ‘sandwich’.

You could pick from the 16 tantalising flavours available or customise your own (S$18) to personalise your order. This makes for a mind-boggling number of options given that after the sushi base choice of Maki or Tatami, you could then select three fillings from options like boiled shrimp, spam, avocado and more, and then add a sauce like mayo, wasabi mayo, salsa, before choosing three sprinkles from the likes of olives, ikura (salmon roe), garlic chips etc.  Top it off with extras and a drink (at additional cost), if you wish.

I did not customise my sushi as I didn’t make it past the menu and its already comprehensive options, and was already taking a long while agonising to pick out one Maki and Tatami. It was mainly between the ‘raw’ and the ‘cooked’ for me, and I eventually decided I was in the mood for the latter that day. For Maki I got the Wagyu Sukiyaki Roll S$23, which comprised succulent Wagyu beef slices on cucumber, simmered tofu, deep fried crown daisy, mayo and a perfect onsen egg on the side that I could dip the sushi pieces in. The crispy shiso leaves on top made for a very fragrant topping. I found Maki to be a convenient choice if one wishes to grab and go, as it is easy to eat with chopsticks.

For my Tatami, I must have subconsciously gone straight for egg and mayo again without realising it, for they turned out to be prominently in the ingredients. The aptly named Island Sunrise Tatami (S$17) is a gorgeous oozy orange soft-boiled marinated ramen egg (IPPUDO is a ramen outlet after all) onigiri came paired with creamy mashed avocado, kakiage (vegetable tempura), mayo, a shio dare (salt-based) sauce. Tatami is a bit messier than Maki to eat and you have to use your hands, but it is none the less satisfying and filling.

The sushi is freshly made in front of you, a process you can observe particularly if you’re doing takeout and waiting for your food.

In addition to sushi, IPPUDO’s ramen and side dishes remain available, together with a range of delectable desserts including soft serves and puddings. Indeed, there are not that many places in the luxury shopping mall where one can grab affordable yet hearty bites, and IPPUDO is probably the best bet after the food court adjacent to it.
