Starting 1 March 2018, The Westin Singapore’s gastrobar Cook & Brew will feature a new theme night–Oyster Thursdays. Oyster aficionados will be able to enjoy succulent Fine de Claire oysters, flown from France and served at affordable prices, and a selection of craft beers and wines, enjoyed against magnificent views of the Marina Bay area from the hotel’s 33rd floor.

We met Chef Aaron Foster, who shucked the oysters for us as fast as we could slurp them up. While I generally prefer mine au naturel with at most a squeeze of lemon or lime, there are multiple condiments to choose from here. In addition to that citrusy squeeze, guests can enliven the bivalves with mango mignonette, horseradish cream, sriracha sauce or just good old tabasco.

Half a dozen Fine de Clair oysters will go for just S$18++, while a dozen costs $29++. The choice is obvious, don’t you think? End of the work week calls for some indulgence, after all.

While the meticulously curated tipple at the gastrobar comes from near and far, ranging from beers from 20 different countries to famed wine appellations of years ago, one suggested ideal pairing with the oysters is a glass of Cloudy Bay Sauvignon Blanc 2017. This crisp white wine from Marlborough, New Zealand features citrusy and lemongrass notes, with an acidity that suggests ageability. Enjoy a glass for S$18++ or share a bottle for S$85++.

If oysters are not quite the thing of all your drinking buddies, Cook & Brew also offers popular à la carte dishes including Burrata, Whipped Buffalo Milk Ricotta Cheese and Pad Thai fries. My personal favourite is the ricotta – sweet, salty umami all at once, drenched in honey and that unmistakable truffle aroma.

Pad Thai fries: Sweet potato fries, chicken, prawns, peanuts, dried sakura shrimps, chili, Khun Por’s pad Thai sauce.

Cook & Brew’s theme nights are certainly worth checking out. Oyster Thursdays feature oysters from 6pm onwards and Happy Hour deals from 5pm to 7pm, which include house pour liqueur at S$15 nett, one-for-one on half-pint draught beers and $55++ for a bucket of five selected bottled beers. It joins a repertoire of Ladies Nights on Wednesdays and FRIYAY on Fridays, which also feature attractive drinks deals plus live band entertainment from 6pm onwards.

The work-weary can’t help but ask–when will Mondays and Tuesdays be theme nights too?
