Chatterbox Express at Changi Airport Terminal 1: A Delicious Layover Treat

For decades, Chatterbox has been an institution in Singapore’s dining scene, famed for its iconic Mandarin Chicken Rice and a menu that celebrates local flavours with a refined touch. Since 23 October 2024, Chatterbox has launched a new concept eatery Chatterbox Express at Terminal 1 of Changi Airport, allowing travellers can finally savour its legendary dishes on the go. It is a brilliant option for tourists who didn’t have the time to visit the main restaurant but still want a taste of Singapore’s culinary heritage before they jet off, or a perfect layover treat for transit passengers who do not have enough time to get out of the airport to try the famous Chicken Rice.

Legendary Chicken Rice

It would be impossible to visit Chatterbox Express without ordering the Legendary Chicken Rice (S$16.80 per set). But first, I feel the need to manage expectations; Chatterbox Express is a casual eatery so don’t come expecting your chicken rice to be served on a fancy plate. Having said that, it doesn’t take anything away from the experience of a good chicken rice indulgence session.

This dish has cemented its place as a Singaporean icon, and for good reason. The chicken was incredibly tender and juicy, every slice practically melting in my mouth. The rice, cooked with aromatic chicken stock and ginger, was fluffy and packed with flavour. The trio of condiments—gingery chilli sauce, dark soya sauce, and ginger paste—elevated the dish to a perfect balance of savoury and tangy. For anyone new to Singapore or those craving one last bite of home, this dish alone is worth a stop at Chatterbox Express.

Singapore Laksa

The Singapore Laksa (S$12.50) was another highlight for me. With its creamy, coconut-rich broth, it offered a milder spice level than some may expect, but I found it absolutely delightful. It’s the kind of dish that warms your soul without overwhelming your palate. The noodles were silky, and the generous toppings of prawns and tau pok added texture and heartiness. Purists might wish for more heat, but for a crowd-pleasing version at an airport eatery, it hit the spot for me.

Salted Egg Chicken Rice

The Salted Egg Chicken Rice was a fun and indulgent dish. The salted egg sauce was rich and savoury, coating crispy chunks of chicken in a luscious golden glaze. Paired with fragrant rice, it was a decadent option that felt perfectly suited for a leisurely meal between flights.

Chicken Cutlet and Egg Toast

If you’re short on time, the Chicken Cutlet and Egg Toast (S$8) is the perfect grab-and-go option. The crispy chicken cutlet and egg sandwich tucked into lightly toasted bread is simple yet satisfying. It’s hearty enough to keep you fuelled for your journey and compact enough to enjoy while hurrying to the gate.
