A Feast of Flavours at Peppermint’s Tantalising Thai Buffet at PARKROYAL COLLECTION Marina Bay

I’ve always had a soft spot for Thai cuisine—the harmonious balance of sweet, sour, salty, and spicy gets me every time. So when I learnt that Peppermint at PARKROYAL COLLECTION Marina Bay was hosting their highly anticipated *Tantalising Thai* buffet, I knew I had to give it a try.

The buffet is the culmination of Chef Wattanasak “Bas” Changkeb, Top Chef Thailand champion, and Peppermint’s very own Chef de Cuisine, Leon Yee, working hand in hand to develop the sumptuous spread.

As soon as I stepped into the beautifully decorated restaurant, the vibe transported me straight to the vibrant streets of Thailand. Thanks to the collaboration with the Tourism Authority of Thailand, the dining space was adorned with authentic Thai touches—ornamental umbrellas, delicate flowers, and a general sense of festivity. The ambiance alone set the tone for an evening of indulgence.

I kicked off the evening feast with Gaeng Kua Sapparod Lobster—Rock Lobster Cooked in Pineapple Tamarind Gravy. Now, I’ve had my fair share of lobster, but the sweet and tangy pineapple-tamarind gravy took it to a whole new level. The balance of flavours was exquisite; the natural sweetness of the lobster meat was beautifully enhanced by the zesty and fruity sauce. It’s a dish I’ll be dreaming about long after the buffet ends.

Next, I couldn’t resist diving into the Pu Pad Pong Kari—Wok-fried Yellow Curry Crab Meat with Crispy Rice Cracker. The crab meat was sweet and succulent, coated in a velvety curry sauce that was perfectly spiced without being overwhelming. What I loved most was the crunch of the rice cracker, which added a delightful contrast in texture, making each bite an absolute pleasure.

If seafood isn’t your thing, fret not—Peppermint has something for everyone, and the Thai Style Slow Roast Black Angus Tomahawk is proof of that. I watched as the chef carved thick, juicy slices of perfectly roasted beef, glistening with a dark, caramelised crust. The meat was tender, rich, and full of smoky flavour. Paired with a spicy Thai dipping sauce, this was a carnivore’s dream come true. This was my favourite of the night.

I was torn between the Thai offerings and the other sections of the buffet which was still showcasing other cuisine such as local Indian and Japanese fare. I wished I had the capacity for everything but unfortunately, I had to save my stomach space for desserts.

No Thai feast is complete without Thai desserts. The dessert section featured many classics such as Red Ruby with Coconut Milk, Thai Milk Tea ice cream, Thai Tako Water Chestnut and more.

Chef Bas and Chef Leon have truly outdone themselves, bringing the best of Thailand’s culinary traditions to the heart of Marina Bay.
