We talked to Selera Rasa to find out the secret to his nasi lemak which makes people willing to queue an hour for. Those tales you hear about chefs spending ages to cook the perfect egg? They still hold true and was confirmed by Selera himself, who spent hours under the guidance of his father frying countless eggs. Which would explain why their eggs are cooked to perfection as all cooks go through the same training process, and the glorious yolk broke upon piercing on our plates to our delight.

Another highlight is the chili itself, which is a mix of Japanese chilli and Indian chilli. The chili can make or break the dish, but Selera’s dish seems to revolve around the chili itself. With Japanese roots, Selera told us how his grandmother thought that the Indian chilli was too spicy, and mixed their sweet Japanese chilli into the Indian chilli to create the sweet spicy mixture that is a hit with both locals and foreigners. Selera commented that even the French people working in the embassy across the road has come and ask for the chilli to eat with cucumbers straight. No one can resist the taste of that hot, sweet concoction that is Selera’s trademark.

The one differentiating factor that allows Selera’s nasi lemak to stand out from all the countless other stalls is the rice. Basmati rice is normally used in briyani, but lent its aromatic, richer flavor to this dish to have a deeper sensory experience. Who knew eating a mere plate of rice can be so satisfying.

Crave nasi lemak comes with the standard egg, fried chicken and garnishes with several different options to cater to your cravings, as well as add-ons like otah and fishcake. Not to forget, grab a cup of teh halia or teh tahrik that hails from the famous Amoy Street store to wash down your meal. Nothing like some tea to end a meal.
