Ever wondered if you could indulge in delicious treats without the guilt? Guilt Free Food by Joyce has just opened its doors in Telok Kurau on the east side of Singapore, offering a fresh take on healthy bakes. From gluten-free to vegan, low-sugar to high-protein, Joyce’s creations are crafted with love and care, designed to satisfy cravings while keeping your health in mind. With a focus on a convenient takeaway concept, this bakery is perfect for anyone on the go, whether you’re grabbing a quick snack or a wholesome treat.

Before diving into the world of baking, Joyce had been part of the corporate world, working in digital consultancy. While in Hong Kong, she briefly toyed with the idea of starting a guilt-free baking business, but circumstances didn’t align. However, that dream never faded.

With just one baking pan and eight rolls, Joyce’s humble beginnings evolved into the now thriving bakery. Her aim? To create all-inclusive treats that bring people together, all while keeping the rolls full of flavour and good for the body.

And full of flavour they definitely are.

I’ve tried almost everything Joyce offers, but a few standouts absolutely stole the show. First up—the Miso Kombu Cinnamon Roll. Fresh out of the oven, this was an absolute flavour bomb. The dough was pillowy-soft, with just the right amount of chew, but what really set this apart was the miso paste—warm, gooey and oozing out with every bite. The combination of sweet, savoury, and umami flavours was unexpectedly harmonious, creating a depth that kept me going back for more.

I got to try their Vegemite and Marmite variations too, but those didn’t quite suit my palate. The Miso Kombu, on the other hand, struck the perfect balance: rich, complex, and satisfying without being too out there.

Then there’s the Salted Caramel Cinnamon Roll—a decadent twist on the classic that had me hooked from the first bite. The roll itself has just the right amount of cinnamon warmth woven through the layers. But what stole the show was the luscious house-made salted caramel drizzle that is generously poured over the top, sinking into every fold of the dough. It added a rich, buttery sweetness with a hint of saltiness that kept it from being cloying. As if that wasn’t enough, the caramelised sugar bits baked right into the dough created these irresistible little pockets of crunch, adding a delightful contrast to the otherwise pillowy-soft texture. It was indulgent yet perfectly balanced—sweet, salty, sticky, and oh-so-satisfying. I mean… What’s not to love?

For something truly special, head down on weekends to try the multi-sensory Roll Bowl. You get to choose between a sweet or savoury version, depending on what you’re in the mood for. Joyce kindly let me DIY my own, and I, of course, went for the sweet option.

My bowl came with a salted caramel mochi muffin, an original glazed cinnamon roll, lemon-infused cream cheese, and my choice of fruits—a dreamy combination of textures and flavours. The warm spices from the cinnamon roll shone through, pairing beautifully with the tangy cream cheese that Joyce prides herself on making from scratch. To make the experience even better, I enjoyed my bowl on the wooden bench out back, a simple alfresco area that Joyce and her husband personally put together.

As someone who is gluten-sensitive herself, Joyce wants to make sure that anyone with dietary restrictions feels welcome. After all, on Wednesdays, we wear pink” (Mean Girls, 2004)—but at Guilt Free Food by Joyce, it is gluten-free. Every Wednesday, the bakery offers a special lineup of gluten-free goodies, made in a dedicated space to ensure zero cross-contamination. With Monday and Tuesday reserved for deep cleaning, the kitchen and equipment are spotless—so gluten-free folks can enjoy their treats, worry-free!

So, if you’re looking for a place that combines great flavours, inclusivity, and a personal touch, this is the spot to be. Come for the food, stay for the vibes, and leave feeling satisfied—guilt-free.
