Seafood Paradise, already a household name when it comes to fresh seafood and imaginative local cuisine, has partnered with Ms. Maria & Mr. Singh (Singapore), Chef Gaggan Anand’s relaxed spinoff restaurant. These two culinary minds combine their skills in Singapore-style seafood by adding the intriguing combination of Indian and Mexican flavours.

Stir-fried Live Tiger Prawn with Gaggan’s Crab Curry Base.

The new and exclusive menu bannered by the Live Tiger Prawns stir-fried in Gaggan’s Crab Curry Base (S$29.90++) comes highly recommended. In this dish, the fragrant herbs and spices from Gaggan Anand’s crab curry are used to infuse these succulent tiger prawns, which are then stir-fried to perfection with a light coating of exquisite wok hei.

Grilled squid with salsa tacquera (S$28.90++) is one example of a dish that showcases the seemingly contrasting yet complementary blend of flavours. Grilling sweet, soft squid in the traditional manner adds smokiness, while the tartness of Mexican salsa taquera amps up this famous seafood dish.

Similarly, the fresh and somewhat spicy tang of the salsa taquera dressing on the Fresh Jumbo Canadian Oyster with Salsa Taquera, Pickled Shallots and Tobiko (S$12.90++ per pc, minimum order of 2 pieces) complements the meaty Canadian oysters perfectly. The oceanic richness of the oyster is amplified by the strong punch and mellow salt of pickled shallots and briny tobiko.

Banana leaf-wrapped whole jade perch marinated in tamale masala sauce for explosive flavours and spice is presented here as the Baked Jade Perch with Tamale Masala Sauce (S$68.90++). In addition to preventing the fish from drying out after baking, wrapping it in banana leaves helps give it a savoury sear without scorching the skin.

Gaggan’s Crab Curry, including Seafood Paradise’s Creamy Butter Mud Crab and a topping of Coconut Crumbs (S$128.00++), takes centre stage. The crab curry uses the juiciest, meatiest crabs and douses them in his version of Seafood Paradise’s signature aromatic creamy butter sauce.

Infusing Indian elements into traditional Chinese fried noodles, the Seafood Paradise Mee Goreng with Ms. Maria & Mr. Singh’s Masala served with Papadum (S$25.90++) is a great choice for those looking to try a dish with a bit of local taste.
