One of the most well-loved local desserts in Singapore is the ice kachang. And to celebrate the 58th birthday of Singapore and as a nod to this well-loved dessert, Fanntasy – an online bakery started by Singaporean actress Fann Wong – has come up with a tart designed inspired by the sweet frosty treat. The tart is named Memories Tart (S$62).
To achieve the recognizable toffee-like caramelisation in ice kachang, a buttery sable is layered with a light and fluffy almond sponge dressed in aromatic gula melaka cremeux in the tart. Layers of sweetened red bean puree, chendol jelly, sliced almonds, and diced attap seeds make for a delicious dessert. The classic rose syrup in ice kachang gets its floral aroma from the finishing of rose Chantilly cream.
The Nostalgic Kachang and other Childhood Favourites
Along with the Memories Tart, Fanntasy is reintroducing a few of its most popular tarts, which will be offered in limited numbers each day.
The Strawberry Hazelnut Bliss (S$62), a luxurious combination of chocolate cremeux, hazelnut praline, and Valrhona strawberries whipped ganache on a chocolate sable crust, finished off with chocolate pearls, is a fan favourite, followed by the Pistachio Strawberry Tart (S$65), a nutty white chocolate delight riddled with fragrant pistachio and refreshing strawberries on a pistachio sponge.
Don’t miss the Yuzu Match Tart (S$59), which was initially introduced for Mother’s Day. It boasts of a sweet and sour matche cremeux flavours elevated by a generous layer of zesty yuzu curd. The Signature Valrhona Chocolate Tart ($58) is the reigning champion, with rich Valrhona chocolate cremeux produced with Valrhona 70% dark chocolate atop a layer of delicate almond sponge that balances off the whole flavour.
