Kausmo’s Specially Curated Christmas Menu Sparks Joyous Gatherings

It’s that time of the year again when we make time attending table gatherings with loved ones and long-lost friends. What better way to do it than over an exemplary gastronomic experience.

Wondering where to reserve a table for that holiday gathering? Look no further than Kausmo, located at Shaw Centre in the heart of Orchard Road.

From 6 December 2022 to 1 January 2023, the chefs of Kausmo will be crafting a special Christmas menu (S$155++) for the festive period. Keeping in line with Kausmo’s ethos, the menu focuses on locally sourced, wild-caught seafood and artistically filtered fruits and vegetables of odd sizes and shapes. Expect lots of earthy umami undertones throughout this dinner with the liberal use of herbs and spices.

Curated menu for a merry culinary experience

Bread: Lemon & Sage Brioche | Wild Honey Butter.

Begin your Christmas feast with a Lemon and Sage Brioche made with fresh lemon and dried sage. This fragrant brioche is then coupled with a delectable wild honey butter and smoked sea salt flakes.

Appetiser 1: Heirloom Tomatoes | Ricotta | Curry Leaf.

These optically refined heirloom tomatoes no longer fulfil retail criteria after falling off their vines. These are seasoned generously and served with a creamy whipped ricotta foundation, a drizzle of curry leaf oil, and pickled fennel aromat. This refreshing appetiser is then adorned with locally grown Mexican tarragon leaves, which offer a delicate sweet anise perfume that complements the tomato flavour.

Appetiser 2: Mandarin and Zaatar Lamb Rack | Charred Grape Relish.

Grapes in overabundance are roasted and then lightly pickled in champagne vinegar. This relish, made with green chili, mint, and cucumber slices, is delicious with the roasted lamb rack that has been seasoned with a Zaatar and Mandarin spice blend.

Main: Roasted Quail | Mushroom Veloute | Chestnut Gnocchi.

These quail medallions are served with a creamy veloute made from open-capped mushrooms and brushed with a savoury-sweet sambal sauce. The sorrel leaves bring out the flavour of the homemade chestnut gnocchis.

Dessert: White Velvet | Smoky Mascarpone | Parmesan & Hazelnut.

Cap off the unforgettable feast with a Buttery white velvet cake topped with smoked mascarpone creme, seasonal fruit compote, and a grated parmesan and hazelnut blend is served as dessert.
