Where Haute Horlogerie Meets Haute Patisserie: AP Café Singapore Collaborates with AMI Patisserie

In the world of luxury, true craftsmanship is often measured not by speed, but by patience. Whether it takes the form of a meticulously assembled timepiece or a beautifully composed dessert, excellence is rarely rushed. This June, Singapore’s AP Café invites guests to experience that philosophy firsthand through an exclusive month-long collaboration with AMI Patisserie by award-winning Japanese pastry chef Makoto Arami. Running from 2 to 30 June 2026 at the world’s first AP Café, located within the iconic Raffles Hotel Singapore, the partnership brings together two seemingly different worlds united by a shared devotion to precision, artistry and time.

The collaboration marks the first chef partnership for AP Café, the hospitality concept created by Swiss luxury watchmaker Audemars Piguet. While one maison is celebrated for crafting heirloom-worthy timepieces in Le Brassus since 1875, the other traces its roots to a family confectionery legacy dating back to 1935 in Japan’s Shiga Prefecture.

At the heart of this collaboration lies a simple but compelling idea: craftsmanship transcends medium.

For Chef Makoto Arami, whose pastry philosophy blends Japanese sensibility with French technique, the partnership feels particularly natural. A third-generation pastry chef, Arami honed his craft in some of the world’s most respected kitchens, including Beige Alain Ducasse in Tokyo and Dominique Ansel in New York, before establishing AMI Patisserie in Singapore. His desserts are known for their refined flavours, meticulous execution and understated elegance.

These qualities resonate strongly with Audemars Piguet’s approach to watchmaking, where generations of artisans have dedicated themselves to mastering the smallest details.

The result is a limited-edition collection that celebrates not only flavour, but also the artistry behind its creation.

Takumi Sei: The Signature Creation

The centrepiece of the collaboration is Takumi Sei, an elegant dessert inspired by two Japanese ideals.

“Takumi” refers to mastery of craftsmanship, while “Sei” embodies precision and refinement. Together, they form a dessert that feels both thoughtful and restrained.

Priced at S$22++, the creation combines matcha, azuki and raspberry in a carefully balanced composition. The earthy depth of premium matcha meets the gentle sweetness of azuki beans, while raspberry introduces a bright acidity that lifts the entire dessert. Visually striking yet understated, it reflects the same attention to proportion and detail found in fine watchmaking.

Three Choux, Three Expressions of Craft

Complementing Takumi Sei is a Signature Mini Choux Assortment (S$28++), featuring three individual creations that showcase Chef Arami’s mastery of flavour and texture.

The Smoked Caramel Coffee Choux pairs AMI’s house-blend coffee cream with flowing caramel lava and hazelnut, delivering a rich and comforting finish. For matcha lovers, the Uji Matcha Kinako Choux highlights the nuanced bitterness of Uji matcha alongside Hokkaido kinako and white chocolate. Rounding out the trio is the Berries Pistachio Choux, which combines vanilla kirsch cream, raspberry and pistachio in a sophisticated balance of fruitiness and nuttiness.

Each choux is intentionally petite — a single, perfectly formed expression of craftsmanship designed to be enjoyed in the moment.

More Than Just Dessert

Part of the appeal lies in the setting itself. Located within the historic Bar and Billiard Room at Raffles Singapore, AP Café offers a tranquil space where guests can immerse themselves in the wider world of Audemars Piguet beyond watchmaking. The café’s elegant interiors and leafy surroundings create an atmosphere that encourages guests to slow down — a rarity in modern Singapore.

To complete the experience, diners can pair the desserts with AP Café’s curated beverage selection, which includes single-origin coffees, Japanese tea blends and seasonal infusions. Together, they extend the conversation between flavour, precision and craftsmanship.

The AP Café x AMI Patisserie collection is available exclusively at AP Café Singapore from 2 to 30 June 2026, Tuesday to Sunday, from 11am to 7.30pm. Reservations are recommended.
